No-cook nut balls
A simple, no-bake snack made with a mix of peanut butter, prunes, raisins and almonds, rolled into balls and coated in nuts

Ingredients
- 30g almonds
- 80g prunes
- 100g smooth, peanut butter
- 60g chopped mixed nuts
- 55g raisins
Method
- Cut the almonds in half. Chop the prunes into pieces about the same size as raisins.
- Put the peanut butter, prunes, raisins and almonds into a bowl and mix well.
- Take a teaspoon of the mixture and drop it into a bowl of chopped mixed nuts. Use another clean spoon to roll it around so the nuts stick.
- Shape it into a ball with your fingers. The balls will be about the size of a 2 pence coin before rolling, and about the size of a table tennis ball once coated.
- Repeat until you have 12 balls. One serving is 2 balls.
- Put the balls in the fridge for 30 minutes before eating. Keep them in the fridge and eat within 2 days. You can also freeze them for later.
Top tip
If you have a nut allergy, use seed butter, pumpkin seeds in the centre and sesame seeds on the outside. Prefer different nuts or dried fruit? Simply swap them in for your favourites.
