Cheesy houmous pitta
A super-tasty, meat-free lunchtime snack

Ingredients
- 1 wholemeal pitta, lightly toasted
- 2–3 leaves little gem lettuce, shredded
- 1 x medium tomato, sliced
- 30g reduced-fat cheddar cheese, grated
- 2 tablespoons reduced-fat houmous
Method
- Cut the pitta in half and open up each pocket, being careful of any steam that’s released.
- Inside each pocket, add a small amount of spread.
- Then fill each half with the lettuce, tomato, grated cheese and hummus. Enjoy!
Twist it
You can make the sandwich vegan, by swapping the cheddar cheese for a vegan cheese variety.
Make your own hummus and save the rest for another day.
