Chocolate apricot bites
A no-bake, sweet snack made with cannellini beans and apricots, perfect for enjoying whenever you fancy something sweet

Ingredients
- 80g cannellini beans
- 20g Greek style plain soya yoghurt
- 20g 90% cocoa dark chocolate
- 30g rice puffs
- 80g soft apricots
Method
- Blend the cannellini beans with the yoghurt.
- Melt the chocolate and mix with the bean mixture.
- Stir in the rice puffs and apricots.
- Place into 4 cupcake cases (or use a silicone cupcake tray) and place in the fridge for an hour to chill.
Top tip
If you can’t find dried apricots, try swapping them for prunes or raisins. Not worried about dairy? Greek yoghurt is a great alternative. For a vegan option, use vegan chocolate instead of regular chocolate. Don’t have cupcake cases? Simply press the mixture into a baking tin, chill and then slice into bars.
