Ingredients
- 1 banana
- 150g raisins
- 75g dates (without stones)
- 150g cooking apples, cored and chopped
- 150ml unsweetened apple juice
- ½ teaspoon mixed spice
- ½ teaspoon cinnamon
- 1 pack filo pastry (6 sheets)
- 150ml semi-skimmed milk
Method
- Preheat the oven to 200°C/Fan 180°C.
- Put the peeled banana in a bowl and mash it using the back of a fork.
- Put the banana, raisins, dates, apples, juice and spices into a saucepan.
- Heat the mixture on the hob until it is simmering. Simmer for 20 minutes, stirring often, until it becomes a pulp. Once cooked, let it cool slightly.
- While the mixture is cooling, lightly flour a clean surface and roll the pastry out flat.
- Cut the filo pastry into squares (around 10cm x 10cm) using kitchen scissors.
- Using a pastry brush, lightly brush the squares with milk.
- Lay 3 squares of pastry on top of each other and do this with the rest of your squares.
- Put 1 teaspoon of fruit mixture in the middle of each square.
- Pinch the corners of the pastry together to make a parcel.
- Gently lift each parcel and put it on the baking tray lined with greaseproof paper.
- Bake your parcels for 10 minutes, or until they turn golden.
- When they are ready, take the parcels out of the oven and let them cool.
- Serve with a glass of milk – delish!
This is easy for young cooks because you can use scissors to cut the pastry, and a pastry brush is just like painting!
