Grilled romaine lettuce
Lettuce makes an eye-catching and healthy addition to a BBQ

Ingredients
- 2 Romaine lettuce hearts (1 romaine lettuce heart per 2 people)
- 1 tsp cumin
- 1–2 cloves garlic, finely chopped
- ½ a lime, juiced
- 1 tbsp olive oil
- Freshly ground black pepper, to taste
Method
- Slice the lettuce in half, lengthways.
- To prepare the marinade, put the ingredients in a large bowl and whisk with a fork to combine.
- Place the lettuce in a bowl with the marinade and massage into the lettuce.
- Cover and leave in the fridge for at least 30 minutes.
- When the BBQ is hot, grill the romaine hearts until lightly browned on all sides, turning every minute or two until done.
Enjoy as a side to some grilled chicken, fish or beans
