Ingredients
- 400g sweet potatoes, peeled and cut into chunks
- Spray oil
- ½ teaspoon chilli powder (to taste)
- 1 teaspoon paprika
- 1 teaspoon olive oil
- 1 onion, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 2 small garlic cloves
- 4–5 small tomatoes, chopped
- 4 x 120g cod fillets
- 30g black olives, halved
Method
- Preheat the oven to 200°C/Fan 180°C.
- Coat the sweet potato chunks in spray oil, chilli powder and paprika. Spread evenly on a baking tray lined with a baking sheet and bake for 30–40 minutes.
- Meanwhile, heat the oil in a pan and fry the onions and peppers until soft. Add the garlic and continue to cook for a minute.
- Add the tomatoes and cook for another minute. If needed, add a little water, so it doesn’t dry out.
- Place cod on top, cover pan and cook for about 6–8 minutes or until the fish is cooked.
- Finally, add the halved olives and warm through. Divide the cod and sweet potato wedges between 4 plates and serve.
