Italian chicken parcel

Ingredients
- Spray oil
- 1 small sweet potato, peeled and thinly sliced
- ½ small red onion, finely sliced
- 6 cherry tomatoes
- 1 chicken breast, skinless (about 120g)
- ¼–½ teaspoon dried mixed Italian herbs
- Freshly ground black pepper, to taste
Method
- Preheat the oven to 220ºC / Fan 200ºC.
- Place a large square of foil on a baking tray (about 30 cm x 30 cm)
,and coat with a fine layer of spray oil. - In the centre of the foil, layer the slices of sweet potato and onion. Around the sweet potato, place the cherry tomatoes.
- Top with the chicken breast and season with the dried herbs and black pepper.
- Pull up the sides of the foil and seal, leaving space in the parcel for steam to circulate.
- Place in the oven and bake for about 25 minutes.
- Check the chicken is cooked through before serving.
