Raw fennel salad

Ingredients
- 1 fennel, finely sliced
- 1–2 cloves garlic, chopped
- ½ a lemon, juiced
- 2 tbsp olive oil
- Ground black pepper, to taste
Method
- Put the finely sliced fennel and chopped garlic into a bowl and mix.
- Add the lemon and leave for a few minutes as this slightly cooks the garlic.
- Add the olive oil and ground black pepper and mix together.
- Cover with cling film and leave in the fridge for at least 30 minutes before serving. This will ensure that all the flavours are properly infused.
